So, Mike and I try to menu plan. When you plan out your meals, it can really help save on the cost of groceries. We get out supermarket flyer on Fridays and I usually go food shopping on Sundays or Mondays. No matter how much we meal plan though, stuff always comes up and sometimes we need to improvise. Below is a our menu for this past week.
Sunday – I made this Italian Chicken. Honestly, it was good, and Mike really liked it, but I was a little disappointed. I expected a lot more flavor than what it had. I would still make it again though.
Monday – It was just me for dinner. I just had something small
Tuesday – I made homemade pizzas. I used the whole wheat Boboli pizza crust. I made a regular pizza with pizza sauce, shredded mozzarella cheese, and pepperoni. Then I made a margherita pizza with olive oil, sliced tomatoes, fresh mozzarella, and basil. Honestly, I was disappointed in both pizzas. I think it was the crust. I love homemade pizzas, but I think next time, I’ll buy dough and do the crust myself
Wednesday – Mike had the leftover pizza and I had a turkey and cheese melt.
Thursday – I made this Easy Chicken Enchilada Casserole. Again, I was a little disappointed. I put the casserole together before work and stuck it in the fridge. Mike stuck it in the oven when he got home from work since I was running late. I reheated it when I get home. It was really good, but It lacked structure. I thought the corn tortillas would hold the casserole together better than it actually did. Still yummy though and very easy to put together.
Friday – We went out for pizza with friends
Saturday – We were supposed to have crockpot chili, but then we decided we were going to go out with friends and would have the chili on Sunday. However, about an hour before we were supposed to leave the roads got really bad and we ended up canceling our plans. So, we had to improvise a meal. We decided on meatball subs. I had some frozen meatballs in the freezer as well as son hoagie rolls. So we defrosted the rolls, heated up the meatballs in some marinara sauce, toasted the rolls, and topped the subs with some fresh mozzarella. Delish and super easy.
