2/1/15 Weekly Meals

So, for the Superbowl I made these amazing deviled eggs with bacon and blue cheese.  It was a special treat for Mike.  He loves bacon, blue cheese and deviled eggs.  So, it was perfect.

Then, because I had leftover bacon, I made this wonderful, easy, delicious meal of Bacon Asparagus Pasta.  This is a staple in our house.  I make it whenever I need to use up some bacon.  Mike loves it and so do I.

Another meal I made this week was something I had been dying to try.  I had seen this recipe on Pinterest numerous times and I finally decided to give it a try.  I must say, Oven Baked Chicken Fajitas will now be in the regular rotation.  I cut the veggies and chicken and did all the prep the night before.  All I had to do was stick it in the oven when I got home.  It was great.  I did however manage to slice my finger again while chopping the onions.  Our new Cutco knives are great, I’m just not used to chopping with knives to sharp.

The only other meal I made this week was something I just came up with on the fly.  I had some uncooked chicken strips leftover from making the fajitas so I marinaded them in some blackberry ginger balsamic vinegar.  I then baked them in the oven (along with some roasted broccoli) and viola! dinner!  Turned out pretty tasty too considering it was a last minute thought, but the BV was a little overpowering.  It didn’t really go well with the broccoli.
