2/22/15 Weekly Menu

 

So, Sunday Mike and I met some friends at the bar for some beers, chicken wings, and darts.  I love chicken wings.  Maybe its because I live in Buffalo, the birthplace of the chicken wing, but I could eat wings every day.  Yum!  Since we went out early-afternoon though, I knew we were going to be hungry later in the night and I knew I wasn’t going to want to cook, so I made this scrumptious Crock Pot Cream Cheese Chicken Chili.  Mike LOVES this recipe.  In fact, he told me he could eat it every day in the winter!

Monday I had the girls over for our wine night and Mike had work so no real dinner was made.  I did however make this easy Fruit Dip.

Tuesday we had spaghetti and meatballs per Mike’s request.

Wednesday Mike had a late meeting and I was babysitting for our friends.  So, I broke out the crock pot and made this Zuppa Toscana Soup with a side of cheese and crackers.  It was really good, but Mike didn’t care for the consistency.  I think I cut the potatoes too big and Mike wasn’t sold on Kale, but the soup itself was very tasty.

Thursday we had teriyaki pork sirloin and broccoli.  I had taken the pork out of the freezer on Tuesday morning.  On Thursday night, I was working late and asked Mike to put the pork in the oven for me.  Apparently, it was still frozen.  As such, the pork took over an hour to cook and it was dry and rubbery when it it was done.  Even when the pork is not frozen, it always takes longer to cook than listed.  I will not be buying the Smithfield Pork Sirloins again.

Friday, Mike and I went to Wegmans for seafood.  It was good, but too much fried foo.  Won’t be doing that every Friday, but I would definitely do it again.
