3/1/15 Weekly Menu

Here is last week’s menu.  Sorry for the delay.  It’s been a hectic week already.

Sunday Mike and I went to Chipotle with some friends and then out for some frozen yogurt.  I love frozen yogurt.  It’s a sweet treat that can be pretty healthy depending on what toppings you pile on.

Monday I was on my own for dinner

Tuesday I made jerk chicken and some Spanish rice using this jerk sauce Mike’s sister brought back for us from Jamaica.

The sauce was very flavorful! I had marinaded the chicken breasts in the sauce and then baked the chicken in the oven.  It was good, but I think next time I’ll shred the chicken in the sauce to get even more flavor.

Wednesday I made Slow Cooker French Onion Soup.  I made mine with provolone cheese though and I think I may have used too much garlic.  I always like a lot of garlic and the soup was really good, but next time I think I’ll hold back a little.  Also, I’ll probably put two slices of cheese on top.  One can never go wrong with more cheese.

Thursday I made Chicken and Swiss Extraodinaire, but again, I didn’t use Swiss Cheese (it’s the one cheese I don’t like).  Instead, I used Provolone.  This dish was REALLY good, but my chicken was really thick (and probably not thawed all the way) so it took a lot longer to cook than directed.  So, Mike and I had some cheese and crackers while we waited.  The chicken was definitely worth the wait though!  Yum Yum!

Friday I was going to make this yummy Shrimp Asparagus Tortellini in Lemon Dill Scampi dish, but by the time I got home, I was exhausted and felt lazy.  So I made spaghetti instead and made the tortellini on Sunday.  If you like dill, I highly recommend this dish!

Just a side note, there will be no menu posted for the week of 3/8/15.  It’s restaurant week here so Mike and I will be going out a lot!  I promise I’ll make it up the following week though.
