So, this past weekend I went home to visit my family. While I was there, my mom made this delicious cheeseburger soup. My mom works at a school and got the recipe from the ladies who work in the cafeteria. In fact, she got a whole packet of soup recipes from them. I always like to give credit for recipes I try/make, but I honestly don’t know who came up with this one. It is too yummy not to share though. So, below is the FFCS recipe for Cheeseburger Soup.
- 1/2 lb ground beef
- 3/4 cup each chopped onion, shredded carrots, and diced celery
- 1 tsp. each dried basil and parsley flakes
- 4 tbsp butter, divided
- 3 cups chicken broth
- 4 cups peeled and diced potatoes
- 1/4 cup all purpose flour
- 8 oz cubed processed American Cheese (we used Velveeta)
- 1-1/2 cups milk
- 1/4 tsp salt
- 1/2 tsp pepper
- 1/4 cup sour cream
In a 3 qt saucepan, brown beef. Drain and set aside. In same pan, saute onion, carrots and celery with basil and parsley in 1 tbsp of the butter, until tender (10 minutes). Add broth, potatoes and beef. Bring to boil. In small skillet, melt remaining butter. Add flour and make roux. Cook until bubbly (2 minutes). Add to soup mixture. Bring to a boil. Cook 2 minutes. Reduce heat to low. Add cheese, milk, salt and pepper. Melt cheese. Remove from heat and stir in sour cream. Enjoy!
This soup was so good that the five of us had it for dinner on Saturday and again for lunch on Sunday. Yum!
