Monday Menu 8/31/15

Last week we had some great dinners.  I left Saturday morning though and went and spent the weekend at my parents so I didn’t cook Saturday or Sunday.  Here is last weeks short menu though.

Monday – I slacked and can’t even remember what we had.  Oops

Tuesday – I made chiavettas chicken and caprese pasta.  I love anything caprese and Mike’s sister had given us fresh cherry tomatoes from the garden so I’ve been making a lot of caprese salads.  They’re just so light and refreshing.

Wednesday – I made stuffed peppers.  So easy.  I just made my stuffed pepper dip (recipe found here) with a few less peppers and then instead of dipping, I took the “dip” and stuffed the peppers with it.  So yummy!

Thursday – We had a marinated pork shoulder and salad.  Delish, but just took too long to cook.  We were hungry!

Friday – I made this fabulous caprese “pasta”.  My co-worker had been talking about how she loves using her fresh tomatoes to make caprese pasta in the summer.  I decided to put my own twist on it though and used zoodles instead of pasta noodles.  So, it was just zoodles, olive oil, fresh tomatoes, fresh mozzarella, fresh basil, and a little salt and pepper to taste.  Yum Yum and healthy too!
