It is fall (almost winter) and that means comfort foods. Hands down my favorite comfort food is mac and cheese. I love anything with cheese. However, between the cheese and the pasta, it is not the healthiest for you. So, I did a little research and found a recipe on Pinterest for cauliflower mac and cheese. Here is the link to the recipe and then the actual pin suggested replacing the cream cheese with ¼ cup of plain Greek yogurt to make it even more healthier, so I did. The result was cheesy goodness. You only knew it was cauliflower and not pasta because of the texture. You certainly could not taste the difference. And speaking of taste, the recipe calls for a bit of mustard. Mustard is definitely the key ingredient. I used Webber’s Mustard because I live in Buffalo and that’s what Buffalonians use and I used a little more than 1 tbs. because I really like mustard and wanted to make sure you could taste it. You could definitely taste the mustard but it was certainly not overwhelming. The whole dish came out great. Even Mike raved about how good it was. So, if you’re craving comfort food, but not looking to pack on the calories, I highly recommend this healthy twist on a classic dish!
