I am so sorry that I haven’t been posting our weekly menu. I promise I will go back to posting.
With the wedding coming up and grilling season upon us, Mike and I are trying to eat healthier. We are also both working out. So, here is a look at what we did this week:
Sunday: I have no idea what we did for food
Monday: Mike had drill and I had…something
Tuesday: Taco Salad – I used Wegmans Southwest Salad mix (without dressing) for the salad. Then I browned up some ground turkey and added a few dashed of cumin, chili powder, and minced garlic. I then drained the meat and added it to the salad. Next came 1/2 a can of Goya black beans, 1 avocado, and a jar of salsa. I then added a dollop of sour cream to mine. It was very good and fairly healthy for us too. An entire salad serves 4 at 366 calories per serving (about). Good job me!
Wednesday: Chicken Pesto Pizza – I started with Wegmans Wheat Naan. I then spread some basil pesto over the naan and added some cubed chicken breast. I then cut up some fresh mozzarella and placed is strategically over the toppings and baked at 350 for 20 minutes. The pizza came out great! However, this was not the healthiest meal for us. An entire naan pizza comes in around 725 calories. Now, Mike and I had the calories to spare because we hit the gym that morning, but if you skip the gym, you might also want to limit yourself to 1/2 a pizza.
Thursday: Tomato, Roasted Pepper and Arugula Pasta – This dish was really easy to make and it was quite yummy, but, if I did it again, I would use baby spinach instead of arugula. The arugula just gave the creamy pasta a weird taste. Mike didn’t think it tasted weird and he really like it, but, I would go with baby spinach next time.
Friday: I hit the salad bar at Ruby Tuesdays with Mike’s mom
Saturday: We went out to eat was some friends at Bar Louis. Mike and I split the hummus plate as an appetizer and then I got the VooDoo Chicken sandwich for dinner. It was good, but my bun fell apart after two bites and then I was just annoyed so I ate the chicken sans bun and ordered another beer.
This week, we’re continuing our healthy streak. Stayed turned to see how the shrimp tacos, veggie kabobs and everything else turns out!
