I have been hearing about zoodles for a little while now. Before I went out and bought (or registered for) a veggie slicer/spiraler, I wanted to see if I liked zoodles. I noticed while shopping at Wegmans that they have pre-packaged zoodles. Thank you Wegmans. So, I purchased the zoodles and decided to ty out a recipe I found on Pinterest for shrimp scampi zoodles. However, it was so hot here last week, there was no way you were going to get me to turn my stove on. So, I decided to try making it on the grill. 1st I laid out some tinfoil and put the zoodles on top. 2nd I sprinkled some EVOO onto the zoodles. 3rd I put the shrimp on top of the zoodles. 4th I sprinkled on some minced garlic. 5th I put about 2 tbs of butter on top. 6th I wrapped everything up in the tinfoil and Mike put it on the grill.
Now, I don’t know how long he cooked everything for or how hot the grill was, but there was nothing raw so we didn’t have to worry. He flipped the tinfoil a few time and when we thought everything was warm enough, we took the tinfoil off the grill, opened it up and scooped out our food. The outcome? YUMMY!
Mike and I both really liked the meal. I was not prepared for the zoodles to shrink up that much though. What looked like a lot of food ended up being just barely enough for the two of us. Something to take into consideration for next time, and there will definitely be a next time. This meal is too easy and too healthy not to make again. Have you cooked with zoodles yet?
